Temasek Gold Basmati Rice is delicately Perfumed and fluffs up into elegant, long nutty grains when cooked.Paired with smoked Salmon and a rainbow medley of vegetables, it creates a new fusion classic.

Serves 4

Ingredients:
2 cups Temasek Basmati Rice, cooked.
300g Smoked Salmon slices
1 cup diced red, green and yellow bell peppers.
1 cup garden peas
1 cup Sweet corn kernels
1 cup Pine nuts toasted
Diced ham(optional)
Salt and pepper to taste

Method:

  1. Mix Temasek Basmati Rice with Peppers, sweet corn kernels, peas and half the toasted pine nuts. Season with salt and pepper.
  1. Line a medium sized bowl with smoked Salmon slices, leaving some slices hanging over the edge of the bowl. Pat down Salmon slices firmly and patch up any holes.
  1. Spoon the Basmati Rice salad into bowl, and fold over the salmon slices.
  1. Chill the smoked salmon bowl in the fridge until ready to serve.Turn out on a plate, Cut into segments and serve.

Serves 4

Ingredients:
2 cups Temasek Gold Basmati Rice
1 Brown Onion,Finely Sliced
2 Tablespoon Ghee (Clarified Butter)
2 Cinnamon sticks,4 Cloves,4 Cardamom Pods
100 g Chopped Almonds
1 Tablespoons Raisins
2 ½ Cups Chicken Stock/Water
Salt To Taste
1 Spring Chicken, dressed and butterflied
1 teaspoon Sea Salt
1 tablespoon Chopped Coriander plus
1 teaspoon chopped Chilli
1 tablespoon Olive Oil

Method:

  1. Fry sliced onions in ghee till lightly browned.Add Temasek Gold Basmati Rice and stir well to coat.
  1. Add cinnamon sticks, cloves, cardamom pods, raisins and chopped almonds to the rice mixture.
  2. Place rice mixture in rice cooker, add chicken stock and set to cook.
  1. Cut Chicken down the backbone and smash down slightly so that chicken spreads out  or “Butterflies”
  1. Mix chopped coriander, salt, olive oil and chilli together and rub chicken on both sides with the mixture. Leave aside to marinate for 15 mins.
  1. Roast chicken in Oven for 20  mins or till skin turns golden and chicken is cooked.
  1. Serve roast chicken on top of Ghee rice. Garnish with coriander, brown onions, raisins and almonds.

Serves 4

Ingredients:
2 Cups Temasek Gold Basmati Rice
2 Cups Water or Stock
300 gm Chicken fillet, cut into cubes
100 gm fresh Shitake or button Mushrooms, trimmed
1 teaspoon oil
1 teaspoon corn starch
Salt and pepper to taste

Sauce:
1 tablespoon sesame oil
1 tablespoon dark soy sauce
2 cloves garlic, skinned and minced

Method:

  1. Marinate Chicken and mushrooms with oil, salt, pepper and corn starch.
  1. Wash and rinse Temasek Gold Basmati Rice. Place rice and water into a shallow claypot and cook over medium fire until water is level with rice.
  1. Add Chicken and mushroom on top of rice. Turn Down fire and simmer another 15 min until water is absorbed and Temasek Gold Basmati Rice is fluffed up into long, white grains.
  1. Prepare sauce by frying minced garlic in sesame oil over low fire.  Add the dark soy   sauce, then pour completed sauce over chicken and mushrooms claypot rice.
 
 
 

When Rice takes on a starring role, you need to use Temasek Gold Basmati Rice for Top Quality and good taste. Here, the grains soak up full-bodied chicken stock and fluff up to a delicious and healthy adaption of Hainanese chicken rice.

Serves 4

Ingredients
2 cups Temasek Basmati Rice
1 Chicken (about 1.5 Kg)
6 cloves Garlic,smashed and bruised
1 5-cm long ginger,smashed and bruised
1 large bunch spring onions,green tops removed,while bulbs bruised
3 pandan (screwpine) leaves,rolled and knotted
Sea Salt
3 cups water

Spring Onion and Ginger Dip :
Pound or blend 1 large bunch spring onion,1 3-cm long length of young ginger.

Add salt to taste and pourover 1 tablespoon hot oil or chicken fat.

Chilli Sauce:
Pound or blend 6 seeded Red chillies and 1 3-cm length of young ginger. Add salt and little sugar to taste.

Method:

1. Wash and dry chicken. Remove Fat from inside body cavity and set aside. Rub sea salt all over skin and cavity. stuff garlic, ginger, spring onions and pandan leaves into the chicken.
2. Place chicken into Rice-Cooker and add 3 cups water. Start rice cooker. When steam appears, start timing and switch off cooker completely after 15 mins. Leave to cook residual heat for atleast 20 mins.
3. Remove chicken and cool. Add 2 cups of washed Temasek Basmati rice to chicken stock and set rice cooker to cook.
4. Serve Temasek Basmati Chicken Rice with cut chicken and sauces.

     
 

There are many ways to  enjoy Temasek Gold Basmati Rice, and one of the most toothsome is to cook it pilaf style, like in this classic seafood paella from the sunny Mediterranean. It brings out the best elegant grains.

Serves 4

Ingredients:
2 cups temasek Gold Basmati Rice
2 cups chicken stock
2 tablespoon olive oil
8 chicken mid-wings
2 onions, minced
3 garlic cloves, crushed
2 green peppers diced
1 punnet cherry tomatoes
300gms squid (about 2 large ones)
Cut into rings
16 medium prawns, feelers trimmed
Saffron strands, soaked in a little chicken stock
Salt and pepper

Method:

  1. Fry onions and garlic in olive oil in a large frying pan and add chicken wings to   brown. Add Temasek Gold Basmati Rice and stir well to coat.
  1. Add Tomatoes, green Peppers and whole prawns to the pan.
  1. Mix saffron with chicken stock and add to the rice ladle by ladle, making sure each ladle of stock is fully absorbed before adding more.
  1. When rice is almost cooked, add squid rings and cover the pan on low heat.
  1. Remove cover after 10 mins and adjust seasoning. Garnish with chopped spring onions or coriander leaves and serve.

Ingredients:
2 cups hot cooked Temasek Gold Basmati Rice.
1 bunch basil leaves, washed and wiped
1 tablespoon sun-dried tomatoes, chopped
10 salted, pitted black olives, sliced
1 tablespoon extra virgin olive oil
1 teaspoon salt.
500 gm Red tomatoes
1 sweet Red bell pepper
1 bunch spring onions
1 Brown onion, quartered
1 teaspoon minced ginger
Salt and pepper to taste

Method:

  1. Tear basil leaves into smaller pieces and place in grinder together wit salt and olive oil.  Blend to a rough paste.
  1. Add basil pesto to hot cooked Basmati Rice and mix well.Add sliced olives and chopped sundried tomatoes. Toss well to mix.
  1. Prepare the salsa by placing tomatoes, red bell pepper and brown onion. Blend for a few seconds, but leave it pretty rough for texture.
  1. Garnish chopped herbs like thyme or oregano and serve salsa with herbed rice.
 
 
     
 

Temasek Gold Basmati Rice makes fragrant base for any rice salad. The light perfume of the rice goes well the selection of young baby vegetables, tender chopped herbs and diced ham to make a deliciously fresh salad that can be served warm or chilled.

Serves 4

Ingredients:
2 cups cooked Temasek Basmati Rice
200g chicken or turkey ham,diced
100g fresh baby corn,cut into chunks
1 small green bell pepper diced
1 cup baby carrots diced
1 cup baby tomatoes washed and dried
1 bunch coriander chopped
Salt and pepper to taste

Dressing:
1 tablespoon sesame oil
1 tablespoon extra virgin olive oil
1 tablespoon aged balsamic vinegar
1 tablespoon toasted sesame seed

Method:

  1. Mix diced ham ,cut vegetables and cooked Temasek Gold Basmati Rice. Sprinkle with chopped coriander and toss salad well to mix thoroughly.
  2. Adjust seasoning with salt and pepper.
  3. Prepare dressing by placing all ingredients in a large screwtop jar. Shake well and when emulsion forms, drizzle dressing over rice salad.
  4. Serve salad in at room temperature or place in a covered container so rice doesn’t dry out) and chill for a refreshing salad or for a picnic or a hot day.
 

Pair the delicate perfume of Temasek Gold Basmati Rice with the rich fragrance of fresh coconut milk and you will have a meal that is hard to forget. Traditional Nasi Lemak (literally “Rich Rice”)is a South East Asian favourite and when cooked with basmati rice-it becomes  a true culinary classic.

Ingredients:
2 Cups Temasek Gold Basmati Rice
1 cup fresh cocnut milk
1 ½ cup water
1 teaspoon sea salt
4 cardamom pods
4 cloves and 2 stcks of cinnamon
2 pandan leaves knotted
8 small fishes, dressed
8 chicken mid-wings
2 tablespoon turmeric powder
1 teaspoon salt
1 tablespoon corn starch

Method:

  1. Wash and drain 2 cups Temasek Gold Basmati Rice and place in rice cooker.Mix the fresh coconut milk and salt together and add  to rice. Add enough a water to make up 2 ½ cups liquid.
  2. Place cardamom pods, cloves and cinnamon in the rice and top with pandan knot. Switch on the rice cooker.
  3. Place fish and chicken wings in a large bowl and marinate with turmeric, corn starch and salt. Fry in hot oil till crisp.
  4. Serve coconut rice with a side salad of cucumbers and tomatoes and the fried fish and chicken wings.

Traditional examples are the pilaf and biryani dishes, but its ideal qualities can also be showcased infusion classics like this crab-flavoured tomato rice.

Serves 4

Ingredients:
2 cups temasek Gold basmati rice
1 kg Red and fully ripe tomatoes
1 cup chicken stock
1 tablespoon finely shredded young ginger
1 teaspoon sea salt
1 kg crab, dresses and quartered
1 tablespoon chopped coriander leaves

Method:

  1. Wash and drain Temasek Gold Basmati Rice and set aside
  1. Wash tomatoes and blend into a fine pulp. Season with salt.
  1. Fry ginger in little oil until aroma rises. Add crab pieces and stir fry over high heat.   Reserve half the crab and leave the rest in pan.
  1. Add rice to the pan and mix well with the crab.  Measure tomato pulp and add enough chicken stock to make up 2 1/2 cups liquid. Add to rice in pan. Bring mixture to a boil and turn down heat.
  1. Simmer until liquid is fully absorbed and rice is cooked. Serve with reserve crab pieces and chopped coriander. Garnish with tomatoes.

Serves 4

Ingredients:
2 cups Temasek Gold Basmati rice
2.5 cups water
1 tablespoon canola oil
6 cloves garlic, skinned and chopped
500 gms mixed fresh mushrooms, trimmed.
Salt and pepper to taste
1  tablespoon corn starch and water to mix.

Method:

  1. Washed and rinse Temasek Gold Basmati Rice. Cook with 2.5 cups water in rice cooker. Fluff up with a fork and cool.
  1. Fry garlic in oil, using non stick frying pan. Add cooked Temasek Basmati Rice and toss to mix. season with salt.
  1. Remove rice from pan and keep warm.
  1. Fry mixed mushrooms in a little oil and when juices render, add corn starch and water and stir well to coat mushrooms. Season with salt and pepper.
  1. Plate garlic basmati, pour mushroom mixture by the side and serve with your choice of green vegetables.

Serves 4

Ingredients:
2 Cups Temasek Gold Basmati Rice
2.5 cups water
100g salted fish fillet(about 3 pieces)
100g mushrooms,diced
1 large egg(about 60 g)
2 cm peeled ginger, and cut into thin strips
1 tablespoon oil
Salt and pepper to taste

Method:

  1. Wash and rinse Temasek Gold Basmati Rice. Cook with 2.5 cups of water in rice cooker. Fluff up with fork and cool.
  2. Rinse excess salt from salted fish fillet and dry well.Cut into small cubes..
  3. Place a large frying pan on low fire and fry salted fish cubes until lightly crisp. Add ginger strips to pan and fry until fragrant.
  4. Add cooked Temasek Gold Basmati Rice and diced mushrooms. Toss to mix.
  5. Break the egg into the pan and stir fry rapidly mixing in the rice.Adjust seasoning with salt and pepper .Serve salted fish fried rice on a bed of shredded lettuce.
